Ingredients:
1 whole chicken (well washed and drained)
2 tbsp yogurt
2 tbsp olive oil
1 tsp paprika
1 tsp turmeric
1 tsp chicken seasoning
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
1 tsp honey (optional for a glossy finish and special flavor)
Juice of 1 lemon
2 cloves garlic, minced
1 tsp vinegar
Sliced onions and colored peppers (for garnish)
Preparation:
Prepare the Marinade: In a bowl, mix the yogurt with olive oil, lemon juice, minced garlic, and all the spices. Add the honey and vinegar for a distinctive flavor.
Marinate the Chicken: Make small incisions in the chicken so it absorbs the marinade well. Coat the chicken both inside and out with the marinade. Leave it in the refrigerator for at least two hours (overnight is preferred).
Grilling in the Oven:
Preheat the oven to 200°C.
Place the chicken on a rack in the oven or on a baking sheet lined with parchment paper, and place the sliced onions and peppers under the chicken.
Cover the chicken with aluminum foil for 40 minutes, then remove the foil and let it brown for another 20 minutes until it gets a beautiful golden color.
Grilling on Charcoal (Optional): After taking the chicken out of the oven, you can place it on the grill for a few minutes to give it a smoky flavor.
Serving: Serve the grilled chicken with basmati rice or roasted potatoes and a side of yogurt salad for a complete Iftar meal.
Tip: For tender and flavorful chicken, you can brush it with a little butter before putting it in the oven, and add a teaspoon of honey or sugar in the marinade for an amazing taste.
