3 large eggs

Method:
Preheat a large cast iron skillet in the oven at 200°C (392°F).
Remove the skillet from the oven and add the cut butter. Let it melt completely, covering the bottom of the pan.
In a medium-sized bowl, whisk the eggs, sugar, vanilla, salt, and nutmeg until the mixture is creamy.
Gradually add the milk and flour, alternating between the two, while whisking well after each addition to ensure the flour is fully incorporated.

Place the skillet back in the oven and bake for 18-20 minutes, or until the pancake is golden and beautifully puffed.
