Ingredients:
For the Dough:
4 cups flour
1 teaspoon sugar
½ teaspoon salt
6 tablespoons olive oil
2 teaspoons dry yeast dissolved in a little warm water

1 egg white (for brushing the dough)
For the Topping:
4 medium tomatoes
1 onion
1.5 green bell peppers
½ bunch parsley
Pinch of cinnamon
Pinch of allspice
Pinch of black pepper
Pinch of salt
Instructions:
Mix all the dough ingredients together. Add 1¼ cups of warm water (or as needed) and knead the dough well until smooth and soft.
Cover the dough and let it rest for one hour to allow it to rise.
Divide the dough into small balls (about 17 balls). Roll each ball into an oval-shaped flatbread on a surface dusted with flour.
Arrange the flatbreads on a baking sheet lined with parchment paper, leaving some space between each one so they don’t stick together during baking.
Brush the flatbreads with egg white, and then fold the edges slightly.
Spread the topping mixture evenly over each flatbread, then bake in a preheated oven at 250°C (482°F) for about 12 minutes.
Serve the Lahm Bi Ajin hot with yogurt, and garnish the dish with fresh mint leaves.
For the Topping:
Finely chop all the vegetables (tomatoes, onions, bell peppers, and parsley).
Mix the chopped vegetables with the spices (cinnamon, allspice, black pepper, and salt) until the topping is well-combined.
Note: You can adjust the spices to your liking, and the topping can be prepared in advance before baking.
