Almost every night of the holy month is incomplete without indulging in a *qatayef* pancake, which can be prepared and enjoyed in many ways. Traditionally, *qatayef* is eaten late into the night during Ramadan.
*Qatayef* is a type of stuffed pancake made from a liquid dough, baked and then either grilled or fried in oil. The fillings vary, including options like cream, cheese, walnuts, and it is usually sweetened with syrup. This treat is especially popular in Egypt, the Levant, and the Gulf countries during Ramadan.
There are various sizes of *qatayef*. The standard round size is called *"al-Hamami"*, typically filled with almonds, cheese, or walnuts and either fried or grilled. The smaller version, called *"al-Asafiri"*, is stuffed with cream and eaten raw due to its small size.
*Qatayef* is easy to prepare and is commonly sold in bakeries and sweet shops throughout Ramadan. However, if a housewife enjoys cooking during fasting hours, she can also make them at home.
