½ cup diced mango
6 walnuts, chopped
10 fresh mint leaves

1 tablespoon fresh lemon or lime juice
4 tablespoons water
Salt and black pepper
Instructions:

Cook the quinoa according to the package instructions, then let it cool.
Dice the avocado, bell pepper, tomatoes, and mango into small cubes.
