Ingredients:
1 kg of tomatoes.
1 medium-sized onion.
1 carrot.
1 stalk of celery.
2 tablespoons olive oil.
1 tablespoon tomato paste.
A pinch of sugar.
2 bay leaves.
1.25 liters of boiling water.
A pinch of salt to taste.
A pinch of black pepper to taste.
1 chicken broth cube (optional).
Preparation:
Wash the vegetables thoroughly, then chop the tomatoes and celery.
Cut the onion and carrot into even pieces.
Place a medium-sized pot over medium heat and add olive oil.
Add the chopped onion, carrot, celery, and tomatoes to the pot and stir for 5 to 10 minutes.
Add black pepper and salt to the pot and stir well.
Add the tomato paste and sugar, and stir for 2 minutes.
Chop the bay leaves and add them to the pot.
Stir the ingredients well to avoid sticking at the bottom of the pot.
Add the chicken broth cube, then pour in the boiling water.
Increase the heat from medium to high and let it boil for 5 to 10 minutes until the tomatoes are well-cooked.
Remove the soup from the pot and blend it to ensure there are no large pieces left.
Return the soup to the pot and reheat over medium heat. Serve with your meal.
